Chicken Lettuce Wraps

I wonder who was the first person to ever take a leaf, add meat to it, and consider it a low-carb taco? Well it sure as heck wasn’t me but I sure do enjoy it. These Chicken Lettuce Wraps are Thai based using coconut amino’s, lime juice, and coconut oil.

I’ve seen some recipes use chopped mint. Please feel free to use it in this recipe if you have used it before and like it. I had fresh mint at the time of this recipe, I simply chose not to use it here. I wanted the cilantro flavor instead! Probably use it next time, or just leave them for my mojitos (haha).

Chicken Lettuce Wraps

Ingredients

  • 1 lb chicken breast, skinless, diced small
  • 1 head of Bibb lettuce or Butter lettuce
  • 2 shallots, chopped fine
  • 2 tbsp cilantro, chopped
  • 1 red bell pepper, stemmed and cut into small squares
  • 2 tbsp coconut amino's garlic sauce (I use Coconut Secret Brand), or use soy sauce
  • 1 tbsp coconut oil
  • 4 tsp coconut amino's
  • 2 tbsp lime juice, plus more for seasoning
  • 2 tsp honey
  • 1/2 tsp red pepper flakes
  • 2 1/2 tsp tapioca flour or cassava flour
  • salt and pepper

Instructions

  1. I cut the chicken breast with a sharp chef's knife and cut it into very small pieces. It's a little more time consuming but well worth it. If you are in a bind, let chicken sit in coldest part of the fridge for 30 mins, then pulse in a food processor until it's shredded.
  2. In a large bowl, take 2 tsp of the coconut amino's garlic sauce, 1 tsp lime juice, 1 tsp coconut amino's, 2 tsp flour, pepper flakes, 1/2 tsp salt, and 1/2 tsp pepper then whisk together until combined.
  3. Add chopped chicken breast into bowl with mixture. Mix well and let sit covered in fridge for 30 mins.
  4. While chicken sits in fridge, mix honey, remaining 4 tsp garlic sauce, remaining lime juice, 1 tbsp coconut amino's, and 1/2 tsp flour together in a bowl.
  5. Heat oil in a large skillet to med-high heat.
  6. Add shallots, bell pepper, then chicken. Make sure clumps are broken up to allow even cooking.
  7. Cook about 10 mins or until chicken is slightly golden.
  8. Whisk together again honey mixture, then add to skillet. Stir until combined and sauce has slightly thickened (about 10 seconds).
  9. Remove from heat, then add cilantro.
  10. For meal prep, keep chicken and lettuce separate until ready to eat as shown in the picture below.
  11. Enjoy!
