Chicken Lettuce Wraps
I wonder who was the first person to ever take a leaf, add meat to it, and consider it a low-carb taco? Well it sure as heck wasn’t me but I sure do enjoy it. These Chicken Lettuce Wraps are Thai based using coconut amino’s, lime juice, and coconut oil.
I’ve seen some recipes use chopped mint. Please feel free to use it in this recipe if you have used it before and like it. I had fresh mint at the time of this recipe, I simply chose not to use it here. I wanted the cilantro flavor instead! Probably use it next time, or just leave them for my mojitos (haha).
