So sticky icky good, you’ll want to make more.
Sure anyone can make a drumstick but, how about a GLAZED drumstick? Yeah ok I know you can make one too but my point issssss, let’s make them taste great. Honey is the key here to making it gooey, lime adds a hint of citrus, and ginger helps bring it all together. Oh yeah, there’s a hint of red pepper flakes but that’s optional. - 2 chicken drumsticks
- 1 cup cooked white rice
- chopped cilantro
- 1 tbsp fresh lime juice
- 2 tbsp honey
- 1 tsp freshly grated ginger
- kosher salt
- ground black pepper
- pinch red pepper flakes (optional)
Preheat oven to 450F. Pat dry drumsticks with paper towel. Heat a pan to med-high heat. Spray with oil. Sprinkle salt and pepper onto the drumsticks then place on pan. Cook about 5-10 mins turning over several times making sure it doesn’t burn on one side only. USING AN OVEN SAFE PAN, place it with the chicken still on it, into the oven. Close and bake for 20 mins. If you do not have an oven safe pan, transfer to a rimmed baking sheet lined with aluminum foil sprayed with oil. When timer goes off, mix honey, lime juice, ginger, pinch of salt and pepper and red pepper flakes (optional) and whisk together. Brush half honey mixture onto baked drum sticks. Leave in oven (oven should be off). Wait 5 mins then remove from oven. Finish brushing rest of mix, then garnish with the chopped cilantro. Add chicken and white rice to container, and you’re all set!
