First things first. Let’s talk about arugula.

Have you had arugula yet?
If you haven’t, you will be in for a surprise. Question is, what kind of surprise? The one you like or dislike. It could go either way.

Skirt Steak Salad

Watercress and arugula (I feel) are similar in taste. Both are “pepper-y”. Once you start to chew it, its just like a regular salad. Then the aftertaste comes in. This is where the “pepper” comes into play. Is it me?

Skirt Steak Arugula Salad


  • 1 lb skirt steak, lean
  • 7 tbsp olive oil
  • 6 tbsp balsamic vinegar
  • 1/4 cup red cooking wine, or red wine
  • 1 tsp ground black pepper, fresh divided
  • 6 garlic cloves, lightly mashed
  • 1/2 tsp kosher salt, divided
  • 2 cups baby arugula
  • 2 cups watercress
  • 2 tbsp lemon juice, fresh
  • 1 tbsp avocado oil, or olive oil
  • 1 tbsp parsley, flat leaf, chopped


  1. Combine olive oil, balsamic vinegar, red wine, 1/2 tsp black pepper and garlic cloves in a large ziplock bag.
  2. If skirt steak is too long, cut in half, then add to bag to marinate.
  3. Refrigerate and let sit for 2-3 hrs.
  4. Heat a grill pan to med-high heat. Remove steak from bag and place on hot pan.
  5. Cook approx 3-5 mins each side or until it reaches your desired doneness.
  6. Remove from pan, let sit for 10 mins before cutting.
  7. Combine avocado oil, lemon juice, salt, and pepper. Whisk together.
  8. Toss together arugula and watercress.
  9. If you make this for meal prep, do not add vinaigrette. Store separately.
  10. Cut skirt steak against the grain in thin slices. Add to salad.
  11. Serve with lemon wedges.
  12. Optional: add fresh parmesan reggiano for added flavor

How would you describe the flavor? Either way, I ate it with the steak and the vinaigrette. Combining the steak, vinaigrette, watercress and arugula helps calm the strong taste and makes it much more flavorful. Why am I telling you this? I would hate for you to buy the greens and end up not liking it at all and have it be a waste. Give it a try. Don’t be scared. You’ll never know if you’re going to like until you try it. I heard that you need to try new things at least 3 times before you completely exclude it from your food choices. Have you heard that before? Comment below!
