Lemon Chicken and Pasta

This chicken right here! Lemon Chicken is the latest addition to my meal prep menu. It’s a simple chicken cooked in a simple sauce and yet the result is remarkable! I think this is the dinner to cook when trying to win the heart of that special someone 😉

Lemon Chicken Meal Prep

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Here’s a refreshing, SUPER simple Lemon Chicken meal prep for you to try! 🍋

Ingredients

  • 16 oz boneless chicken breasts
  • 3 ea lemons
  • 1 tbsp Minced Garlic
  • 1 tbsp fresh thyme
  • 1 tbsp dried oregano
  • 8 oz Brown rice pasta
  • salt and pepper

Instructions

  1. In a medium pan, heat olive oil and minced garlic
  2. While that is heating, take a separate bowl and juice two lemons, plus add in 1 tablespoon of oregano and thyme + salt & pepper
  3. In the skillet, add in the chicken breasts and pour over the lemon mixture
  4. Take 1 lemon and zest that over the top of the chicken
  5. Let the chicken cook all the way through on both sides
  6. While that is cooking, cook your pasta according to the directions on the box
  7. Remove the chicken from the pan and slice up each piece
  8. Fill your meal prep container with pasta and then add in your sliced chicken
  9. Take the remaining juice from the skillet and pour over each container evenly
  10. Top with a lemon!
