This is a fun meal prep that is far from basic! If you’ve never had spaghetti squash style shrimp scampi, you’re in for a treat!
Spaghetti Squash Shrimp Scampi
Everyone’s favorite shrimp scampi with a low-carb, healthier alternative to pasta using spaghetti squash! It’s still amazingly buttery and garlicky with half the calories!
Ingredients
- 1 Spaghetti Squash
- 1 lb shrimp
- 1 Cup Mushrooms
- 1 Jar Artichokes
- 1 Bag Spinach
- 6 Whole Garlic Cloves
- 1 Can Diced Tomatoes
Instructions
- Preheat the oven to 450° and place foil on a cookie sheet.
- Slice the spaghetti squash in half, scoop the inside seeds out and cover with olive oil, salt, pepper and garlic cloves.
- Bake for 35-40 minutes.
- In a separate pan, saute the garlic cloves in olive oil then place in the sliced mushrooms.
- Cook on medium for 5-7 minutes then add in the artichokes, spinach and shrimp. Cook until the shrimp turn pink.
- Using a fork, scrape the inside of the spaghetti squash.
- Distribute evenly into four meal prep containers, then top with the shrimp and veggies.
