Spaghetti Squash Shrimp Scampi

This is a fun meal prep that is far from basic! If you’ve never had spaghetti squash style shrimp scampi, you’re in for a treat!

Spaghetti Squash Shrimp Scampi

Cook Time: 45 minutes
Total Time: 1 hour

Everyone’s favorite shrimp scampi with a low-carb, healthier alternative to pasta using spaghetti squash! It’s still amazingly buttery and garlicky with half the calories!

Ingredients

  • 1 Spaghetti Squash
  • 1 lb shrimp
  • 1 Cup Mushrooms
  • 1 Jar Artichokes
  • 1 Bag Spinach
  • 6 Whole Garlic Cloves
  • 1 Can Diced Tomatoes

Instructions

  1. Preheat the oven to 450° and place foil on a cookie sheet.
  2. Slice the spaghetti squash in half, scoop the inside seeds out and cover with olive oil, salt, pepper and garlic cloves.
  3. Bake for 35-40 minutes.
  4. In a separate pan, saute the garlic cloves in olive oil then place in the sliced mushrooms.
  5. Cook on medium for 5-7 minutes then add in the artichokes, spinach and shrimp. Cook until the shrimp turn pink.
  6. Using a fork, scrape the inside of the spaghetti squash.
  7. Distribute evenly into four meal prep containers, then top with the shrimp and veggies.
