Gingerdoodle Cookies

Does anyone else meal prep your snacks?!

I recently came across this festive cookie recipe and decided to give it a try! I added in protein powder so I can enjoy a treat and still hit my macros. They do not disappoint!

Gingerdoodle Cookie Recipe

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

These cookies are made from scratch using only natural ingredients. They're gluten free and vegan friendly too!

Ingredients

  • 2 cups almond flour
  • 1 scoop of your favorite protein powder
  • 1 tablespoon cornstarch
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon ginger
  • 1 teaspoon cloves
  • 1 teaspoon nutmeg
  • 1 cup unsalted butter, Depending on the thickness of your protein powder, you may need to add more butter
  • â…“ cup coconut sugar
  • 1/4 cup maple syrup
  • 1 large egg
  • 2 teaspoons almond extract
  • 1 scoop of your favorite protein powder

Instructions

  1. Preheat the oven to 400 degrees and line a cookie sheet with foil.
  2. In a medium size mixing bowl, combine the protein powder, flour, cornstarch, baking soda, coconut sugar, and all the seasonings.
  3. Take a separate bowl, whisk together the butter, almond extract, egg and maple syrup.
  4. Next, slowly fold the wet ingredients into the dry and mix thoroughly. (Depending on the thickness of your protein powder, you may need to add more butter).
  5. Take the dough and form small ball sized cookies and place them on the cookie sheet.
  6. You should have approximately 12 cookies
  7. Bake for 12-15 minutes.
  8. Place into a container and enjoy throughout the week
