Crunchy, Savory, Sweet, and fresh... what more could you ask for in a salad meal prep?


  • 2 carrots, medium sliced into coins
  • 1 apple (large), large cut into thin slices
  • 1/2 tbsp extra virgin olive oil
  • 1/2 lemon, squeezed
  • 1/2 tbsp honey
  • 2 tbsp walnuts, chopped
  • 1 tbsp fresh chopped parsley
  • salt and pepper to taste


  1. Wash carrots and apple. Prepare as per instructions above
  2. Add carrots and apples to med sized bowl
  3. Pour oil, honey, lemon juice and walnuts
  4. Mix well
  5. Add salt and pepper to taste (optional)
  6. Place in container or dish, top with parsley and you're all set!
  7. Simply double ingredients to make more. Add more lemon juice if left overnight to prevent borrowing.
  8. Enjoy!
