Cilantro Lime Rice

This cilantro lime rice just became my new favorite meal prep staple. Just choose your favorite protein to combine it with and enjoy throughout the week!

Total Time: 25 minutes

How to Make Cilantro Lime Rice for dinner or meal prep


  • 1 Cup Rice
  • 1/3 Cup Cilantro
  • Red Pepper
  • 1 Lime
  • 1/2 White Onion
  • 1 Cup Vegetable, or chicken broth


  1. First, wash your rice.
  2. Then dice the onion and garlic cloves and saute in a pan with olive oil and red pepper.
  3. Add your rice and broth and stir together.
  4. Place the lid on top and leave on medium heat until the water is absorbed.
  5. Stir thoroughly and remove from the heat.
  6. Chop up the cilantro and add on top of the rice, then squeeze the lime juice and mix everything together.
