  • 1 lb ground turkey
  • ½ yellow onion, diced
  • 3 tbsp minced garlic
  • 3 tbsp tomato paste
  • 1 cup beef broth

Instructions

  1. In a large skillet, cook the chopped sweet potatoes on medium heat with water and salt and cover with the lid for 10 minutes or until they are soft.
  2. Remove from the stove and mash the potatoes in a separate bowl. In the same skillet, add olive oil, onions and garlic.
  3. Let simmer for 3-4 minutes and then add in the ground turkey, seasoning, tomato paste and broth.
  4. After the turkey has cooked all the way through, add in the peas and cook on low for another 5-7 minutes.
  5. Preheat the oven to 350°.
  6. Empty the skillet into a baking pan and then top with the sweet potatoes.
  7. Place the pan in the oven and set a timer for 25 minutes.
  8. Remove the pan after the timer has gone off and let rest on the stove for 10 minutes.
  9. You can now separate the pan into four containers and enjoy throughout the week either cold, or reheated in the microwave! This recipe makes four meals.
